In preparation for canning, we made a rather large investment in a fancy instrument to measure dissolved oxygen (DO) and carbonation levels. It’s been very useful to learn our brewery protocols are effective at minimizing DO; we’re between 8 to 20 ppb, anywhere under 50 ppb is acceptable, so it looks exceptional. Low DO means long shelf life and fresh tasting beer!

We’ve also verified our thought that some of our carb stones (used to force carbonate our beer) are useless, we purchased some new carb equipment from a company in Holland NY (in keeping with our buy from NYS theme, we practice what we preach).
